WOW Dianna i too will print up your post very informative thank you....
I find having plenty of garlic, ginger, and lemons which i keep hanging in net bags from the roof onions ETC can just about change most foods into something yummy watch the crew as they smell garlic cooking one whiff and the mouth is watering, some good dry curry powder has most ingredients in them to add some great tastes recently i came across dry chillies in a packet in the Asian section it has become a great success one or to in the most boring food will perk it up i also carry lots of cheap cans of Italian diced tomatoes they go with lots of different dishes, and because i mainly live as a vegetarian i have lots of dry legumes which i use my pressure cooker to speed up the cooking this helps if you are on a longer journey than the weekend and if you are it makes a great oven if you enjoy making fresh bread
